Lunchbox Twofer

You’re in for a treat this week if you’re looking for new ways to beat lunchbox boredom. I was extra creative with meal packing this week, which means I’ve got a lunchbox twofer for you today with this installment of the (Almost) Grownup Lunchbox Series.

First up . . .

A Twist on the Traditional

Two ounces of ham, one slice of Swiss cheese, 1/4 of a medium avocado and mustard on one slice of Arnold Healthy Mulitgrain bread; baby carrots and green pepper slices; two tablespoons Sabra’s roasted red pepper hummus; frozen blueberries; one serving Emerald Cocoa Roast almonds for a snack

And second in line . . .

Broccoli Slaw Pinwheel Salad

Two ounces of honey ham cut in spirals; one slice of Swiss cheese cut in spirals; one large of handful broccoli slaw; 1/4 cup diced yellow squash; frozen blueberries; homemade salsa-ranch yogurt dressing; one serving Emerald Cocoa Roast almonds for a snack

I hope you have a happy Columbus Day! More sightseeing and a possible second trip to Georgetown Cupcake are on the agenda.

Questions:

  1. Have you tried any of my lunchbox creations?
  2. What is your least-traditional lunchbox meal?
