(Almost) Grownup Lunchbox Series – Italian Inspiration

Preparing new mid-day meals took a backseat to traveling and finishing my Washington Center portfolio last week. But don’t worry –  I won’t let you start the first work week of December without some lunchbox inspiration!

Since I didn’t have time to create new recipes of my own, I thought I’d share a few new lunch ideas I discovered from around the Web for this week’s installment of the (Almost) Grownup Lunchbox Series.

Even though the following healthy, Italian-inspired lunches seem simple,  I must say  they look bravissimo.

Simply combine leftover spaghetti from dinner with eggs, cheese, milk, herbs, and spices to make a lunch you can enjoy either hot or cold.

If you have kids, put these quick, easy wraps in their lunches and in yours! If you don’t have children, munch on these roll-ups to feel like a kid at heart.

You could easily make this sophisticated-but-simple dish for dinner and eat it hot or cold for lunch the next day. Not to mention, the recipe uses ingredients you are bound to have in the kitchen – pesto; bell pepper; boneless, skinless chicken breast; sweet potatoes; and cider vinegar.

So there you have it – three new lunchbox meals to help you escape the mundane or fuel up for finals if you’re in college. My only final exam is  Monday, and my portfolio is also due that day. Thus, I have big plans to celebrate here and here on Tuesday. Look for a recap on this week’s What I Ate Wednesday post. 🙂
